Wild-Caught Alaskan Fish!

My mom loves to tell the story about my love of salmon, even in utero.  Every time she ate salmon while she was pregnant with me, cooked or raw (this was before they said raw fish was dangerous for pregnant women), I did a little dance in her belly!  And to this day, it is still one of my favorite foods!  I don’t think I could ever get sick of it. 

Despite the many concerns when it comes to consuming fish like the over-fishing of our oceans, the dangers of farmed fish (pharmaceuticals & toxins), and high levels of toxins like mercury & plastics in our oceans and fish, wild-caught fish and especially salmon offer great nutrition!Most of us know that wild-caught fish (especially salmon) are a great source of omega-3 fatty acids, an essential nutrient for managing inflammation and supporting brain health, but did you know that wild-caught salmon is also a great source of vitamins B3, B12, D, and the minerals selenium, iodine & phosphorus?All critically important nutrients for health and some hard to find in other foods.

I recently had the chance to spend some time in Alaska, and I must say one of my favorite things was the local, wild-caught fish!  Salmon is my favorite (obviously), but I was blown away by the cod and halibut as well. 

We rented a campervan and drove around the various mountain ranges in Alaska, camping and backcountry skiing along the way. We even got to fly around Denali, land on a glacier, and got engaged! It was the trip of a lifetime. While we were in Valdez, we went to the docks to see if there were any fisherman coming back with fish we could buy, and one guy said, “Nope, don’t have any to sell, but here,” and threw us two massive fresh Alaskan cod filets! We thanked him profusely and had the best camping dinner ever!!

One of our favorite ways to cook salmon, is with a simple miso & honey glaze.  I use organic chickpea miso (I try to avoid soy for its estrogenic properties and because most soy is genetically modified), local raw honey (for immune & allergy support, and YUM!), a little organic rice vinegar, toasted sesame oil, and some ginger & garlic for a little zing.  Just make a little paste in a bowl, and spread on the salmon and cook it!!
